D.I.Y Beans on Toast
We all love a bit of comfort food. Usually it involves something that is easy to make, tasty and satisfies you from head to toe.
And what is one of my favourite comfort foods I here you ask?
BEANS ON TOAST
That's right. The classic Brit favourite that usually just means heating up a tin of beans, popping in some toast, and BAM, you have it.
But one thing I am trying to do more often is make more of my meals from scratch [as much as possible anyway]. This way I know what I am eating and putting in my body, and avoiding some of the added preservatives and other naughties often put in pre-prepared sauces, tins and microwave meals.
So, back to beans on toast. Here is my delicious, homemade, DIY version of the classic Beans on Toast for you to try at home. Packing 2-3 of your 5 a day and filled with protein from the kidney beans, it is a healthy and satisfying dish to have anytime of the day.
Recipe [serves 1].
Approx cooking time: 20 mins
Ingredients:
1/2 tin of chopped tomatoes
1/2 tin of kidney beans
1/3 chopped yellow bell pepper
1 tbsp honey
Herbs to taste: salt, pepper, garlic and paprika.
Few leaves of spinach
1 slice of wholemeal toast
Grated cheese for topping [optional]
Method:
1. Heat 1/2 tbsp of coconut oil in a hot pan and fry off the chopped bell pepper.
2. Add tinned tomatoes, kidney beans, salt, pepper, honey, garlic and paprika to the pan. Allow the combination to reduce on a medium to high heat, until the water from the tomatoes has gone.
3. Toast bread and top with spinach leaves, the tomato bean mix and then add grated cheese to finish off.
There we have it. Simple and healthy beans on toast packed with taste and goodness. Let me know if you try it out!
